Muffins and Bread


Super Muffins!( Healthy Extraordinaire!  High in fiber....Judy Nelson)

In blender:
1 apple, peeled, quartered (or  1/2 c. applesauce)
9 pitted prunes (optional—may substitute applesauce or another apple)
9 pitted dates or applesauce
3 small ripe bananas
3 eggs
¼ c. butter or coconut oil
1 T. vanilla
pinch Salt
¼ c. juice, any kind
Pour blended mixture onto:
Mix:
1 ½ c. Whole Wheat flour
1 c. rolled oats or quick oats
2 t. Baking powder
1 t. Soda
1/3  c. flaked coconut (optional)
Stir until mixed. 
Can add nuts, raisins, cranberries, carob chips…
Bake at 350* 20-25 minutes.  Makes 18-24 muffins.
