Fresh Cranberry Sauce


4 C. fresh cranberries ( about one package)
1 c. dark red grape juice OR light grape juice OR apple juice or even orange juice (For a "secret" ingredient that adds a special Wow flavor…add 1/4 t. cherry unsweetened Kool Aid.)
1  orange or mandarin, peeled and chunked OR use 1/2 small can of mandarins, drained.
3/4 c. sugar (can use white, raw, brown or even honey)
2 Tbl. Ultra jel  ( gives some body and thickness)
1/2 to 1 t.  shredded fresh ginger root
Boil the sugar and juice, stir until dissolved. Add the fruit, Ultra Jel & ginger, then process at pulse in a blender or food processor. Can leave some of the cranberries whole if desired. Optional:  5 drops of orange, mandarin or tangerine essential oil. Serve on sandwiches or with turkey. Yum! (Can be made “raw” with Agave instead of sugar and don’t boil it.)

Catalina Style French Dressing

(Created by Judy from blending other recipes--not EXACTLY Catalina, but better! No Soy or Canola oil, preservatives, high fructose corn syrup, phosphoric acid or artificial colors.)
1/2  C. Red Wine Vinegar
1/2 C. catsup
1/2 C. sugar or  1/3 C melted honey
1/2 C. olive oil
1 t. dry mustard
1 t. paprika
1 Tbl. lemon juice
1 t. real salt
1/2 t. black pepper
1/4 t. chili powder
2 t. Worcestershire sauce
1/2 t. onion powder
1/2 t. garlic powder
Optional ingredients: 1/4 c. melted elder or grape jelly; 1/2 c. fresh cranberry sauce;

Whisk all ingredients until smooth.
