8 oz penne or spiral pasta noodles (cooked, rinsed and drained)
2 C. spinach, slightly chopped
1 C. sliced strawberries
1 C. drained mandarin oranges OR cubed, fresh pineapple
1/4 C. dried cranberries
1/2 C. nuts (cashew, pine or pecans)
Optional: 1/4 C. chopped red
onion
1/4 C. peeled, chopped apples
(Use what you have.)
Dressing:
Whisk together in a separate bowl:
1/2 C. olive oil
1/3 C. apple cider vinegar (the good kind)
1/4 C. greek yogurt OR Best Foods mayo (either works)
1 t. prepared mustard
3-4 Tbl. raw honey
1/3 C. orange juice
2 tsp. poppy seeds
